Stuffed Smoked Turkey Breast Recipe, Easy with Hi Mountain Seasonings

With spring turkey hunting season kicking into high gear all around the country, successful gobbler getters looking for a delicious new way to prepare their turkey breast should try this Stuffed Smoked Turkey Breast recipe from Hi Mountain Seasonings. It’s easy.

The recipe is centered around two popular Hi Mountain Seasonings products – the Hi Mountain Seasonings Game Bird and Poultry Brine Kit and Hi Mountain Seasonings Rib Rub. The Game Bird and Poultry Brine Kit is a mixture of salt, sugar, brown sugar, sodium nitrite (.85%), maple syrup, caramel color, and less than 2 percent glycerin added to prevent caking. Each brine package contains two packets of the mix, which make one gallon of brine, for a total of two gallons of brine (two brine bags are included), and easy-to-follow instructions. Stuffed Smoked Wild Turkey Breast Ingredients:

  • 2 skinless wild turkey breasts
  • 1 packet Hi Mountain Seasonings Game Bird and Poultry Brine Kit
  • Hi Mountain Seasonings Rib Rub
  • 1 apple, peeled and cubed
  • 1 onion, peeled and cubed
  • 4 tbsp butter in four 1-tbsp slices
  • Olive oil

Directions:

Brining: In a non-metallic bowl, mix one pouch of Hi Mountain Seasonings Game Bird and Poultry Brine with one gallon of water. Add six cups of ice to the brine. Place the brine bag in a large pot and add the turkey breasts, breast side down, to the brining bag. Pour the brine mixture over the turkey, then place the turkey breasts in the refrigerator to brine for 24 hours.

Roasting: Remove the turkey breasts from the brining bag, rinse under cold, running water, then pat dry with paper towels. Air dry the turkey breasts for at least 30 minutes.

While the turkey breasts are air-drying, cube the peeled apple and onion. Lay the turkey breast flat on a cutting board. With a sharp knife held parallel to the board, cut a pocket into the turkey breast, leaving a section uncut – like a hinge – on the thicker side of the breast. Stuff half of the cubed apple and onion inside the pocket of the first turkey breast and season the mixture with Hi Mountain Seasonings Rib Rub.

Place two 1-tbsp slices of butter on top of the apple/onion cubes inside the turkey breast pocket. Fold the turkey breast over to seal the pocket. Brush both sides of the turkey breast with olive oil, then season all sides of the turkey breast with Hi Mountain Seasonings Rib Rub.

Repeat with the second turkey breast.

Preheat a wood pellet grill that has a smoke/grill option to 200 degrees. Smoke the turkey breasts for 30 minutes. After 30 minutes of smoking, increase the heat to 350 degrees and continue grilling until the turkey reaches an internal temperature of 165 degrees. Remove the turkey breasts from the grill and let them rest for 20 minutes before slicing and serving.

Wild Turkey Pastrami

Ingredients:

Directions:

  1. Mix one pouch of Hi Mountain Seasonings Game Bird & Poultry Brine Mix with 3 1/2 quarts of water. Add the wild turkey to the brine and refrigerate for 7 days.
  2. After refrigerating for 7 days, remove the wild turkey from the brine and rinse thoroughly. Soak the wild turkey in a water bath for two hours, changing the water once during this process. Remove the wild turkey from the water bath and dry it with a paper towel.
  3. Place the wild turkey on a rack to air dry for one hour.
  4. In a small bowl, mix the Hi Mountain Seasonings Garlic Rub and coriander. Liberally coat all sides of the wild turkey with this mixture.
  5. Set the smoker or pellet grill to 200 degrees F and place the wild turkey in it. Once the turkey’s internal temperature reaches 165 degrees F, remove it from the smoker.
  6. Place the wild turkey on a large piece of tin foil. Pour the beef stock on top of the wild turkey and seal the foil tightly around the wild turkey.
  7. Place the wild turkey back into the smoker and steam for another 30 minutes.
  8. Remove foil-wrapped wild turkey from the smoker and carefully take the roast out of the foil.
  9. Let the wild turkey pastrami rest for 20 minutes before slicing and serving.

Note: Use a meat thermometer to make sure the internal cooking temperature has reached 165 degrees F.

Bourbon-Glazed Holiday Turkey…the Tastiest Recipe

Your delicious roasted turkey will be the centerpiece on the family table at Christmas dinner.  To ensure a beautifully tender, moist and flavorful turkey this holiday, here is one easy recipe using flavor from Hi Mountain Seasonings for a “Bourbon-Glazed Holiday Turkey”. This is a true treat for the big holiday family dinner AND later, as leftovers.

Bourbon Glazed Holiday Turkey Ingredients:

  • 1 turkey
  • 1 Hi Mountain Seasonings Game Bird and Poultry Brine
  • 1 Turkey Brine Bag
  • 1 Cup Bourbon
  • 1 Stick of Butter
  • 1 Cup of Brown Sugar
  • 2 Cups of Water

The first step is to brine the turkey for 24 hours. Take one pouch of the brine seasoning and mix with one gallon of water in a non-metallic bowl. Add six cups of ice to the mixed brine. Place the brine bag in a large pot. Place the turkey in the brining bag breast side down. Pour the brine mixture in the bag with the turkey. Place turkey in the refrigerator to brine. When the brining is complete, remove the turkey and rinse it well with fresh cold water. Pat dry. Place the turkey on a rack in a roasting pan. Add 2 cups of water to the bottom of the roasting pan. Preheat oven to 450º. Place turkey in the oven and roast for 30 minutes. While the turkey is roasting, in a small saucepan combine the brown sugar, bourbon, and butter. Heat until melted. After 30 minutes at 450º, reduce the temperature to 325º. Brush turkey with glaze. This should be repeated every 15 minutes until the turkey reaches an internal temperature of 165º at which time the turkey should be removed from the oven and set to rest for 30 minutes before carving and serving.

With the seasonal shift in progress, it’s becoming a colorful time of year, a likable time of year for most everyone that loves the outdoors. For deer hunters, the archery season is open, or close to it, wherever you live.  Most everywhere, it has been too warm and the moon phase isn’t quite right yet for the usual natural deer behavior of bucks seeking to find hot doe’s this early. The rut, the typical time for bucks to mark their territory and leave a scent trail to be followed by members of the opposite sex, is predicted to be the first or second week in November in northern zones. If you are an archery hunter and are out there anyway, I understand. It’s fun to be in the woods in a tree stand 12 to 20 feet above the ground, or higher, safely tethered to your tree and out of any danger that might befall you should you render yourself asleep up there.

I must confess, I fall asleep just about every hunt, but I’m safely tethered to my tree because I’m in a Summit Viper climbing tree stand. It fastens around the tree with a braided wire hoop and also acts as an “easy chair” once “up there.” This is the safest, quietest and most comfortable way to hunt from above ground, tethered to the tree every foot of the way that you climb upward. I am in full confidence that no danger or injury would occur with this setup and I feel totally safe, yet I am always aware of issues, worn parts and all that. Best part? You or I can be in a new tree for every hunt. No over-scent left by our presence in the same tree each time out. Deer have a super-sensitive sense of smell, sight and hearing.  Not repeating in the same tree works to help you be successful.

Many big game hunters that hunt from above ground use a fixed ladder-stand. Granted, it’s easier once in place. Most are using modern, metal stands that will not rot with exposure to rain or snow, that’s a big plus. The old-style, build-it-yourself tree stands from wood are mostly history today, but if you hunt from one of those be VERY CAREFUL. If you hunt from either one of these fixed-stand types, old or new, wood or metal, there is one common protection method that will work for both stand types. Anyone that hunts above ground should always be wearing a full body-harness, of course, that is rule number one. Your family and friends are way too important to be taking care of you with a broken back or a broken neck, since these are among the most common injuries from a tree stand fall, IF YOU LIVE. Lots of guys think they are the big, strong, macho brutes of the woods and don’t need a harness for their 10-foot treestand (hunter girls not so much, they follow the safety rules). Everyone that hunts above ground needs a full body-harness, period. Injury can happen from much lower heights too. Protect yourself.

Yes, the full body-harness takes some time to become familiar with, but once mastered, you can put it on and take it off in about 20-30 seconds, even in the dark. I’ve used mine for about 20 years and it gets to be that simple to draw your bow and aim your arrow, or point your firearm – from 20 or 30 feet up, with complete confidence in your own safety. That’s a big deal to me. The deer and choice of shot is now totally yours, no safety worries. Dead deer. It’s predictable.

With the warm weather early in the season, or when it turns brutally cold during firearm and black powder season, you can hunt with the confidence that you will return. Your children, your family, and your friends might like that if you explain it to them. You are safe. Share this good news. Each year, thousands of hunters are injured in tree stand accidents. In fact, according to the Treestand Safety Awareness Foundation (TSSA), there are about 4,000 emergency room visits each year due to tree stand falls.

Don’t wait until hunting season arrives to practice tree stand safety. Now, the summer months, are the ideal time to begin practicing to get ready for the fall hunt. When fall arrives, safety measures will become part of your routine.

As I got older, I gave up hunting from a tree stand and purchased a 10 by 10-foot hunting shack and loaded it onto my hay wagon. The insulated shack is heated with a Big Buddy Heater and is comfortable. My wife added, “You can go out there and sleep overnight whenever you want!”

There are a number of tree stand safety guidelines which will help educate hunters and are excellent suggestions to review prior to a yearly hunt.

First – Use a full-body fall arrest harness system, the meets stringent, industry standards. Wear the harness system every time you leave the ground, including ascending or descending from the tree stand. Single strap belts and chest harnesses are no longer allowed. Serious injuries including death have occurred each year.

Second – Attach a Full Body Harness System according to the manufacturer’s directions. The tether should have no slack when sitting. Failure to do so may result in suspension without the ability to recover to your Treestand.

Third – Always “read, review, understand and follow the instructions provided by the manufacturer.” If questions arise, contact the manufacturer.

Fourth – Always use a haul line to raise your backpack, gear, and unloaded firearm or bow to the Treestand. Prior to descending, lower the equipment on the side of the tree opposite your descent route.

Fifth – Practice using your Full Body Fall Arrest Harness System in the presence of a responsible adult, prior to using it in an elevated hunting environment. Learn what it feels like to hang suspended in the harness at ground level.

Sixth – Have a plan for recovery, escape, and rescue, including the use of a cellphone or signal device for use while suspended. If you are suspended before help arrives, exercise your legs by pushing against the tree. If you do not have the ability to recover or escape, hunt from the ground.

Trinity Oaks teamed up with the Hill Country Chapter of the Quail Coalition earlier this year to offer six Austin, Texas-area boys the opportunity to truly learn where their food comes from. The boys, all from different backgrounds ranging from single mother to veteran families to underprivileged, experienced first-hand, the entire process of field-to-fork at Trinity Oaks Thumbtack Ranch in Batesville, Texas.
For five of the six boys, this camp was their first time ever receiving gun safety instruction, shooting sporting clays and hunting. After learning gun safety and practicing shooting, the six boys, with full instruction and guides, were taken on a bird hunt that included pheasant, chukar and wild bobwhite quail. The success in the field gave them a better understanding of where food comes, as after the harvest the boys also cleaned the birds, prepared them for cooking, helped to cook them and enjoyed them for dinner.
“Teaching our kids where food comes from is so important, but actually providing this type of hands-on education is nearly impossible for most parents, “ said Britt Longoria, Trinity Oaks’ Executive Director. “At Trinity Oaks, we offer a number of camps and services to Texas youth to help them get outdoors to enjoy, respect and have a better understanding of its importance and role in our everyday lives.

How to Prepare and Smoke Black Bear Backstraps

Across the country where black bear hunting is allowed, harvesting a black bear means more than just a fabulous rug. Bear meat is delicious and healthy when properly cared for in the field and during transport and storage. Generally, bear meat tastes similar to venison – it’s wild uncontaminated red meat, though it is often a little sweeter than meat from deer or elk. It has a dark red color, and in terms of texture, it’s close to pork, though with a slightly coarser grain. 

Like deer, elk, or wild boar, one of the tastiest cuts of black bear is the back strap. Smoking is one of the most delicious ways to prepare a black bear back strap.  

To make it easy, try using the new Smoked Bear Loin Roast Recipe from Hi Mountain Seasonings featuring their Rib-Rub. Reading the label’s contents, I savored the flavor just thinking about the ingredients in this proven blend of spices: paprika, black pepper, salt, mustard, cayenne pepper, soybean oil, honey granules (refinery syrup/honey) and dehydrated garlic/onion. All set to go, this packaging makes tough jobs so simple that all you have to do is set up your smoker. 

The process is simple. You’ll need one trimmed black bear back strap, one can of coffee beer ( I use my favorite dark IPA), the Hi Mountain Rib-Rub, canning salt, fresh ground coffee, ½ cup maple syrup and your smoker or pellet grill. Again, make sure to trim any fat from the back strap. When done, place the back strap in a nonporous container like a clean kitchen mixing bowl or storage container large enough to hold the meat. Add the beer and marinate it in the refrigerator for a couple hours. Remove and pat dry with a paper towel. Next, apply yellow mustard to all sides of the meat. Mix some canning salt with the Hi Mountain Seasoning Rib-Rub mix and ground coffee in a separate bowl. Liberally apply this mix to all sides of the meat and place it in a nonporous container. Cover it with plastic wrap and place it in the refrigerator for 3-4 hours. Remove from the fridge and let it sit at room temperature for an hour. Preheat the smoker or the smoker pellet grill to 250 degrees toward the end of that hour. 

Coat the smoker rack with olive oil and place the bear meat in the smoker/pellet grill. During the smoking process, use a kitchen brush to glaze the roast with maple syrup on the exposed sides of the roast. Smoke it until the internal temperature of the roast hits 160F. Use a digital thermometer.

Slice it thin. Enjoy!

The 2023 football playoffs are finally here! As you gather with family and friends, folks are chomping at the bit to celebrate a team they love. Whether you’re planning a tailgate party or a house party, be prepared to serve drop-in guests the best in delicious quick-finger foods. 

My better half and I usually prepare a supply of wild game meats to be cooked in a potpourri-style venue with our favorite dips and sauces for post-pot dunking on the side. If we tailgate, we put them in a pot and warm them up at the tailgate on a portable cooker, but they are good cold too! Everyone loves mouth-watering chicken wings. Some of the best lures made for fishing were invented long ago and were made in America, too.  In 1952, in a small town near Eliot, Maine, a prototype spoon lure known as Stuart’s Goldfish hit the angler market big time, selling nearly one-million lures a year way back then.  Inventor Al Stuart renamed his flagship lure, Al’s Goldfish, and the company became Al’s Goldfish Lure Company in 1954.  Along the way, other Al Stuart lures became angler-famous, including the “Forty-Niner” and the “Helgy.”

The Forty Niner is a good casting lure and doubles as a trolling lure. The flatfish-style head creates vibration and flutter as the flat face helps it dive. Check out the videos posted Al’s Goldfish website product page of how this lure swims, and you’ll see why fish strike.

Using Al’s Goldfish lures in a recent fishing contest on Lake Tanneycomo in Branson, MO., I was lucky enough to win the event. I was fishing between two seasoned pro’s, Bass pro-Jimmy Zaleski from Parsons, KS., and Charter  Captain Mike Schoonveld from Lake Michigan. Smoked Wild Turkey Breast…EZ Recipe

Directions:

  1. In a non-metal container, prepare the Hi Mountain Seasonings Game Bird and Poultry Brine following the instructions included in the brine kit. Place the turkey breast into the brine and refrigerate for 24 hours.
  2. Remove the turkey breast from the brine and dry thoroughly with paper towels.
  3. Set your smoker or pellet grill to 180 degrees.
  4. Lightly coat all sides of the turkey breast with olive oil and apply a liberal amount of Hi Mountain Seasonings Rib Rub.
  5. Smoke the turkey breast until the internal temperature reaches 165 degrees, making sure to turn the turkey breast once doing the smoking process.
  6. Remove the turkey breast from the smoker and let rest for at least 15 minutes before slicing and serving.

Note: Use a meat thermometer to make sure the internal cooking temperature has reached 165F.
